Meal Plan Mondays

My friends over at Keeper of the Home are launching a 6-week Meal Plan challenge. I’ve been working really hard to get myself organized and meal plan, so I’m all about jumping on board and keeping myself accountable. I’m SOO about doing this, that I actually started this week. The challenge doesn’t start until the 26th, but… well… I’m nothing if not enthusiastic about starting things I’ll struggle to finish.

Without further ado, gang, here is the first of my Meal Plan Mondays.

(As a side note, I meal plan Saturday-Friday rather than Monday-Sunday. It just seems to work better for me)

Saturday

  • Breakfast: Sourdough Buttermilk French Toast with Seven Sons Farm Breakfast Sausage, Real milk
  • Lunch: Tuna Salad on whole-grain Wasa Crackers with cheese and fresh veggies
  • Dinner: Meatloaf with baked sweet potatoes and buttered peas

Sunday

  • Breakfast: Pasture-raised scrambled eggs & homemade sourdough toast
  • Lunch: Church Potluck – I took a crustless sausage quiche and Snickerdoodle Cake from the Is Your Flour Wet? e-book
  • Dinner: Leftovers (I ended up with some plain, organic yogurt, topped with fresh raspberries and sliced almonds)
Monday
  • Breakfast: Nitrite/Nitrate free uncured bacon, fried eggs and sourdough toast, Real milk
  • Lunch: Butternut Squash soup, yogurt and an apple
  • Dinner: Ground beef and quinoa hash
Tuesday
  • Breakfast: Scrambled eggs, fruit & yogurt
  • Lunch: Leftover hash
  • Dinner: Baked Chicken, crispy potatoes and steamed green beans
Wednesday
  • Breakfast: Soaked Irish Oatmeal & Yogurt
  • Lunch: Butternut Squash Soup & veggies
  • Dinner: Pan-seared steak, acorn squash and steamed broccoli
Thursday
  • Breakfast: Scrambled eggs & berry smoothies (made with, you guessed it, Real milk)
  • Lunch: Tuna salad on whole grain wasa & veggies
  • Dinner: Seven Sons Farm Bratwurst, salad and steamed green beans
Friday
  • Breakfast: Eggs, bacon & toast, Real milk
  • Lunch: Leftovers (probably soup & brats)
  • Dinner: Baked chicken, soaked brown rice, zucchini sauteed in garlic

I’m still slowly working through Oliver Twist and Broke. Both the book on Egypt and the book on Kepler will probably have to wait for another time. I  made it about half of the way through The Mind of Egypt and decided that until I know more about historical events in Egypt, I’ll be completely lost trying to understand how Egyptians thought.

  1. Delish! I’ve not been sticking to my menu planning very well and have decided to start again! You save so much time & energy when you menu plan! 6-week plan? Wow, that def. a goal for me to reach for!

    • Marcie – I think the idea is to create a habit by making a weekly plan every week for 6-weeks. I would FAIL UTTERLY if someone asked me to plan six weeks at one spell.

      I wrote this plan on Saturday, and by Saturday afternoon had already made about half a dozen changes. Flexibility is key for me!

  2. Wow – that is such a detailed menu plan! I usually just plan out our dinners each week. I added it as a feature to my blog to keep myself accountable. If I know I have to put up the feature, I know I will make the menu and stick to it (mostly).

    • Shannah, I wish only planning dinners worked for me! If I don’t plan out breakfast & lunch, too – I end up with either no breakfast or running to the coffee shop for a sugar-laden muffin, and then I’m off to some fast-food restaurant for lunch that will utterly destroy my digestive system!

      I almost always make changes to my plans. I’d planned to do crispy potatoes on a night the DH didn’t get off of work until late – I opted for mashed instead; and last night I’d planned squash to go with steak & broccoli – the squash takes at least an hour, everything else about 15 minutes – I swapped in the zucchini, and will do squash tomorrow when I already have chicken to bake.

      I’m still figuring all of this out – things like cooking times and tastes and textures that pair well together – its certainly a learning process!

  3. I’m right behind you in the drive through at Taco Bell or Starbucks when I don’t meal plan! Love your list of meals- especially Monday’s. I just need to find some humanely raised and nitrate free bacon!

    • I frequently buy Hormel’s Natural Choice uncured bacon. The only seller I’ve found locally is at our milk pick-up, and we only make it there every 6 weeks, because we share the hour drive with other families in our area. Hormel’s brand is my compromise brand, because I have no idea how their animals are raised. Good luck!
