Meal Plan Tuesdays!

Since I posted my critique yesterday of Oliver Twist, I figured I’d better get around to Meal Plan Monday challenge. For my own sanity, my plans run Saturday-Friday. Enjoy!

  • Saturday
    • Breakfast: Johnnycakes, sausage and real milk
    • Lunch: Baked chicken, scalloped new potatoes & green beans
    • Snack: Almonds & apples  (we went to a performance of the Emerson String Quartet this evening, so we ate “lunch” around 3, to avoid needing to pick up fast food on the road)
  • Sunday
    • Breakfast: Whole milk organic yogurt with blueberries and almonds
    • Lunch: El Arrieros – a local Mexican place that serves the closest I can find to “real” food – I love to dig into their Fajita Quesadilla!
    • Dinner: Crockpot Chili & Yogurt Cornbread (I’ll post that recipe soon – cornbread, not chili, the DH is the chili expert in my house)
  • Monday
    • Breakfast: Scrambled eggs & sausage
    • Lunch: chili & cornbread, sliced apple
    • Dinner: Scrambled eggs with real bacon bits, salsa, shredded raw cheese & sour cream, sourdough toast & sliced apple with almond butter (it was supposed to be salmon… this sounded much better and kept our evening less hectic as we had to eat quickly to get to orchestra rehearsal)
  • Tuesday
    • Breakfast: fried eggs & yogurt with blueberries & almonds
    • Lunch: Chili & cornbread, apple
    • Dinner: Bratwurst, oven fries, salad & tomato wedges
  • Wednesday
    • Breakfast: steel cut oatmeal, yogurt & blueberries
    • Lunch: Chili & cornbread, apple
    • Dinner: Oven baked salmon, buttered quinoa & broccoli with lemon butter
  • Thursday
    • Breakfast: Real milk breakfast smoothies & scrambled eggs
    • Lunch: Lentil-Barley soup & wasa crackers, apple (this is a new recipe, I’ll post it if I love it!)
    • Dinner: Meatloaf, acorn squash & green beans
  • Friday
    • Breakfast: Fried eggs & sourdough toast
    • Lunch: Lentil-Barley soup & wasa, apple
    • Dinner: homemade cheese pizza & salad with homemade ranch dressing

    • They’re tasty – but can get repetitive. I usually make a big batch of soup at the beginning of the week and eat it for lunch every day until its gone. I just can’t do deli meat sandwiches or fast food any more! Welcome to Echoing Footsteps!
